Subject: Rich Richardson's Potato / Cabbage Soup

Rich posted this recipe on the main board on 9/24/06. I think it is a keeper, so I'm posting it here on the recipe board so it isn't lost.
Potato/Cabbage Soup
4 large potatoes
1 onion
1/4 head of cabbage (I use more)
1 - 2 cups chopped celery
a couple of carrots
2 quarts of water
1 tsp. caraway seeds
1 tsp. celery seeds
salt and pepper to taste
I substituted veggie bouillon for the caraway and celery seeds (don't have them). I believe that Rich mentioned in his post that he sometimes adds other veggies also. Anyway, I let it cook for about 1 hour and then mashed it with a potato masher to thicken it. Mashing it gives it a nice creamy taste. This is a very forgiving soup so you could add other spices. :)
