Subject: Pumpkin Oat Bran Muffins

OAT BRAN MUFFINS

1 box oat bran (16 oz)
1 ½ cups oats (Quick Oats or Regular)
2 Tablespoons baking powder
1 teaspoon cinnamon or pumpkin pie spice
1 teaspoon salt
Mix and save. When ready to use, measure out 2 cups. To this add whatever you want of--
Raisins
Nuts

3 teaspoons of brown sugar or sugar or sweetener.

Wet ingredients are 1/2 cup applesauce (or pumpkin or mashed banana) and about 1/2 cup water, maybe more. The texture should be moist and almost wet.

I add half an apple, chopped, to make the muffins stay moist longer. Canned fruit pieces are good, too.

Bake in a 12-cup muffin pan (oiled or sprayed) at 375 for 21 to 23 minutes
.
When taken from the oven remove the muffins from the pan by turning upside down over a plate. The next day I put whatever’s left into the refrigerator. They can also be frozen.

Dry ingredients:
Oat bran
Oat meal
Baking powder
Salt
Cinnamon or pumpkin pie spice

Other ingredients:
Applesauce
Raisins
Nuts
Sugar or sweetener
Water

Chopped apple
