Subject: Summer Squash Casserole

The original version of this was cooked with butter and then topped with shredded cheddar cheese. This version is much healthier!

SUMMER SQUASH CASSEROLE

1 1/2 pounds yellow crookneck squash and zucchini, sliced
1/4 c water
1/2 onion, chopped
1/2 tsp parsley flakes, optional
1/4 tsp basil
1/4 tsp oregano
Salt & pepper to taste
1 c tomatoes, chopped

Preheat oven to 350 degrees.
Place squash, water, and onion in a casserole dish. Sprinkle herbs on top.
Cover and bake 40 minutes.
Sprinkle tomatoes on top and cook an additional 10 minutes uncovered.
