Tofu “Fish” Sticks

1 pound firm tofu (not silken)

Marinade

1/3 cup soy sauce
1/3 cup red wine
1 teaspoon garlic powder
¼-1/2 teaspoon red pepper flakes (optional)
¼ teaspoon ground black pepper

Coating Mixes

Bowl #1 –
½ cup whole wheat flour
1 teaspoon oregano
A pinch of sage
Salt to taste (may not need any, as marinade is salty)

Bowl #2 –
½ cup soy milk

Bowl #3 –
1.5 cups breadcrumbs (seasoned or plain, your choice)

1) Slice tofu into pieces resembling “fish sticks”. Mix marinade ingredients in a shallow dish; place tofu sticks in marinade and spoon mixture over top to coat. Cover, refigerate, and marinate from 1-12 hours.
2) Prepare three bowls with the coating mixtures above.
3) Take each tofu stick and dip first in the flour mixture, then the soy milk, then the breadcrumbs.
4) Place on non-stick cookie sheet or one lightly sprayed with vegetable oil.
5) Bake in 350 oven for 20-30 minutes, turning once half way through.
6) Serve with tartar sauce, lemon wedges, or cocktail sauce
