I haven't done this in ages, but it works. You can make a healthy cream or white sauce by mixing flour with soy or rice milk in a pan, then gradually heating, stirring constantly, until thickened. Figure out how much flour to how much liquid from your big SAD cookbook. I think it's around 2 Tbsp. flour to each cup of liquid, a little more flour if you are using whole wheat. Add seasonings and use in your recipe.

SAD white sauce requires you to fry the flour in a pan with butter, making a roux, then gradually stirring in the liquid. But since we don't use butter or oil, this is the preferred method. You can either whisk the flour and liquid, or shake it in a jar to mix thoroughly.
