Subject: Need help substituting cream in a recipe

Caught the eggplant episode on Alton Brown last night. Learned alot about eggplant. Saw a recipe that was kind of inspirational - but it includes cream. Normally I'd substitute soy milk for the cream - but I'm not sure that would work in this case.

The big thing in this recipe was that it was supposed to be quick. He cooks it in two minutes on the show.

Of course - I wouldn't be sticking to the recipe at all - instead of eggplant - I have a glut of zucchini from the garden.

I was thinking I could substitute soymilk and add some nutritional yeast. But I'm not sure it would thicken without some kind of thickener - and I also don't know how quickly it would cook down. And I wouldn't want to overcook the zucchini.

The show had him adding toasted bread crumbs at the end - to resemble an eggplant parmigan(sp?) These are missing in the recipe. But I would add them for texture.

It occurs to me now - that except for ice cream - I didn't eat creamy things before I McDougalled - and I haven't really tried any creamy recipes since McDougalling.
