Subject: Crockpot Red Beans and Rice

Red Beans and Rice (in the crockpot)
1 lb. dried red beans
Wash beans, pick out stones, etc. Put the beans into crockpot. Fill your crockpot with water to twice the depth of the beans. (If you like thicker beans use less water. For soupy beans use more water.)
Cook on low all day.
About an hour or two before you are ready to eat, add:
1 onion, chopped
1 bell pepper, chopped
4-5 ribs celery, chopped
4 cloves garlic, chopped (I like garlic, so you might not want this much)
1/2 tsp. dried thyme leaves, crushed
2 bay leaves
1/2 tsp. vegetarian Worcestershire sauce
a few dashes liquid smoke (optional)
Creole seasoning to taste (I use Zatarain's or Tony Chachere's)
Cook a few hours longer. Remove the bay leaves.
Serve over brown rice.
I usually serve with LoriM's Cornbread and a pitcher of sweet tea.
