Marla,
I just wanted to say that I made your Penne Mexicali while my mom is here visiting. She knows that I am dieting, but I didn't explain that I have eliminated all meats, daries, and oils from my diet. As I was making it, she commented "Where's the meat?" By the time we had sat down to the table and were both on our second helping, she was absolutely raving about it and said that she doesn't even miss the meat at all! That's a big thing coming from my meat and potatoes family. Thank you for posting your recipes for everyone to enjoy.
