Subject: My special breakfast!

I absolutely love mashed potatoes and I eat them every day for breakfast. I mash them with unsweetened soy milk to the consistency I want and add a small amount of salt and pepper.

For a long time I topped them with creamed corn but the other day I got creative and came up with this delicious topping.

One can of Trader Joe's fat-free Black Bean Chili

One can of Whole Foods organic black beans, drained

One can of creamed corn - your choice

One cup of fresh steamed corn on the cob or frozen corn

A small amount of liquid - your choice - broth, water, etc.

I just mix all of them together and use some every morning as a topping on my mashed potatoes. Sooooooooo good and I get a boost from having some beans first thing in the morning.

Note: Usually canned items have so much sodium in them so I came up with the idea of diluting the sodium a little by mixing them with other items that didn't have much sodium. That seems to minimize the sodium intake considerably.
