Subject: Baked Sweet Potato Fries

This was the fifth recipe from my "Veganize/McDougallize Food Network Recipe" challenge. I have a picture and a link to the inspiration recipe on my blog.

Baked Sweet Potato Fries
2 large sweet potatoes (about 3 pounds, total)
3 T. potato starch
1 T brown sugar
1/2 teaspoon salt
Pinch cayenne
Pinch cinnamon

Wash and peel sweet potato. Cut into "french fry" shape. Boil sweet potatoes in water to cover until soft-crisp (almost like al dente). Drain, but don't dry.

Toss sweet potatoes with potato starch and bake at 400° until crispy.

Combine the brown sugar, salt, cayenne and cinnamon in a large bowl. Add the fries and toss to coat. Serve immediately.

Note: If you don't like spicy foods use a *very small* pinch of cayenne. I added the same amount of cayenne as cinnamon and it had a nice kick.
