Subject: Vegetable Pot Pie

This was the second recipe from my "Veganize/McDougallize Food Network Recipe" challenge. I have a picture and a link to the inspiration recipe on my blog.

Vegetable "Pot Pie"

Potatoes, carrots and parsnips all cut into 1" chunks. Simmer in water until about half done.

Then add:
sweet peas
corn cut fresh from the cob
fresh green beans, snapped in half
zucchini cut into 1" chunks
crimini mushrooms cut in half
onion cut into 1" chunks
garlic to taste
Flat leaf parsley

Simmer in water until almost done.

Cover with vegetable broth. Thicken with cornstarch.

Pour into lightly sprayed baking dish.

Cover with Featherlight Dumplings (I think this recipe is Jan Tz's?):
Mix in a medium bowl:
1 cup unbleached flour
2 tsp. baking powder
1/4 tsp. salt
2 T chopped flat leaf parsley

Stir in to make a stiff dough:
1/2 cup water

Stir briefly just to mix. Drop small spoonfuls of dough on top of vegetables. Bake uncovered at 400 F. for about 15 min. Then I usually cover with foil and bake another 15 min.

This recipe makes about 8 dumplings, so make as many batches as needed.
