Subject: Muffaletta Salad

Muffaletta Salad Recipe modified from Rachael Ray's 30 Minute Meals Episode: All That Jazz 1 cup mixed cracked good quality olives, coarsely chopped 2 cups giardiniera salad (pickled cauliflower, hot peppers and carrots), drained except for 1/4 cup liquid 5 to 6 ribs celery from the heart, chopped 1 large tomato, chopped 1 fresh green bell pepper, seeded and chopped 1/2 red onion, chopped 3 tablespoons red wine vinegar Salt and pepper Combine olives, giardiniera, celery, tomato, pepper, onion. Dress with vinegar and giardiniera liquid, season with salt and pepper and let stand a few minutes before serving.
Serve with hard bread or over a bed of couscous. Enjoy!
