These two got rave reviews last year. I thought I would repost them for your convenience.
--------------------------------------------------------------
CREOLE BLACKEYED PEAS
1 pound dried black-eyed peas
2 quarts water
˝ to 1 tsp. Liquid Smoke
1/2 cup green bell pepper chopped
1/2 cup onion chopped
1/2 cup green onion chopped
1/2 cup celery chopped
1/4 teaspoon garlic powder
1 teaspoon black pepper, or to taste
Wash peas and soak overnight in cold water. Drain peas. Place all ingredients in large pot, add 2 quarts water. Cook at least 2 hours or until peas are tender. Additional water may be needed .

GIN'S "ALMOST NO THOUGHT REQUIRED" BLACK-EYED PEAS
I just put a pound of rinsed, dry beans on the stove in a pot of water, add a veggie bouillion cube, a chopped onion, a tiny bit of garlic, 1/2 tsp. oregano, and black pepper. Boil about 45-60 minutes. Serve with cornbread, and maybe a slice of onion on the side.
I'm from the south, and we just cook dry beans with our favorite flavors. You may choose to search the web for "Hoppin' John" receipes.
Also, cook some cabbage or greens for the blessing of $$$.
Good Luck in the New Year!
