When firm, add fruits, nuts, etc. ---- Custard 2 cups soymilk 3/4 cup natural sugar 2 Tbs custard powder (like Bird's brand), cornstarch, or arrowroot 1 tsp vanilla (or to taste) Pinch of cinnamon (optional) Mix 1/4 cup soymilk with custard powder. Set aside. Put 1 & 3/4 cups of soymilk in a saucepan. Bring it to boil over medium-low heat. When the 'milk boils, immediately remove pan from heat. Mix in cornstarch mixture and sugar, stirring well. Return saucepan to heat. Cook the custard over a low heat, stirring constantly, until thick. Remove from heat. Stir in vanilla. Serve hot or cold. VARIATION: Baked Custard If a baked custard is desired, pour prepared custard (above) into greased custard cups. Put cups into a deep baking pan. Pour hot water halfway up the sides of the cups. Bake in a moderate oven for 30 minutes, or until set. Sprinkle with cinnamon and/or nutmeg. Serve hot or cold.
