Subject: any cookie ideas?

We tried some "vegan" cookies at a local health food store. They had currants and shredded carrots in them. I would love to find a great recipe for some very skeptical kids. Kid friendly vegan desserts are hard to come by. We like sorbets, bar cookies and quick breads, but something they can take in their school lunches with ease. Any suggestions would be terrific! :~)
