Mayo/Sour Creme
This recipe was adapted from "Tofu Cookery" by Louise Hagler. The oil has been omitted from an otherwise wonderful recipe and the quantity of tofu changed for convenience.
Combine in a blender:
1 box soft silken tofu
1 Tbs. lemon juice
1 and 1/2 tsp. sugar
1/2 tsp. salt, or to taste
Blend until smooth and creamy. Use as mayonnaise on sandwiches or as a base for dips and salad dressings.
CREAMY COLESLAW DRESSING, adapted from Better Homes and Gardens "New Cookbook."
1/2 cup mayo
1 Tbs. cider vinegar
2 tsp. sugar
1 tsp. celery seed
1/4 tsp. salt
Mix well together. Stir into about 4 to 4.5 cups coleslaw mix - shredded cabbage, carrot, green pepper, onion.
IMPROVED CORN BUTTER
This is what I ended up with after trying Bryanna's Buttery Spread.The coconut adds 5 grams of fat in the entire recipe but also a little fiber.
1/4 cup yellow cornmeal
1 cup water
1/4 cup soymilk
2 tsp. lemon juice
1 tsp. salt
2 Tbs. flaked coconut
Combine the cornmeal and water in a saucepan. Cook and stir until you have made mush. Process remaining ingredients in blender well. Add the mush to the blender. Blend very very well, until it is smooth. Yield is 12 to 14 oz.
