Subject: Chi Chi's Sweet Corn Cake

Sweet Corn Cake

Preheat the oven to 350 F. Film or spray a 9 x 5" loaf pan.

Mix the dry ingredients together in a medium bowl:

1 cup yellow cornmeal
2 T sugar
1/2 Tbs. baking powder
1/2 tsp. salt

Mix the liquid in a smaller bowl:
1/2 cup water
1 can cream-style corn, with all the liquid

When the oven reaches temp., pour the liquid into the dry. Mix well. Pour into prepared loaf pan. Bake 40 to 45 min. until all the liquid has been absorbed. Use an ice cream scoop to serve. Serve warm.

Chi Chi's is a little sweeter than mine. If you want, you can increase the sugar.
