Subject: Creole Potatoes

This recipe came from Valerie in Seattle - don't know if she is still on this board, but wherever she is, thank you!

8 medium potatoes
1 large sweet potato
1 cup frozen peas
1 cup frozen beans
1 cup corn (I use canned, but original was probably frozen)
1 cup frozen limas (or other bean)
1 tablespoon Creole seasoning (I use 2)- recipe below
1/2 cup water

Dice potatoes (about 1/2 inch), add other ingredients, mix, cover and bake for 1 1/2 to 2 1/2 hours at 375F.

Creole seasoning
3 tablespoons paprka
1 tablespoon each of salt, garlic powder, onion powder, black pepper, cayenne, oregano, thyme
(I cut back on the cayenne - don't like it too hot)
