Subject: This is a good low fat salad dressing

I have been reading the messages on your board and thought I would give you the one I have been working on. I don't know a lot about the McDougall program (even though I have his book) but I do know the Weight Watcher Point System and 2 Tbs. of this dressing is about 1/2 point, so you could have a whole 1/4 cup for a point. I make a sandwich with this on toasted sprouted wheat bread (2 slices) with baked tofu and tomatoes and the whole sandwich is about 4 points--maybe less.

Lynne's Low Fat Salad Dressing--Lynne Snyder

Thick Water

1 cup water
5 tsp. arrowroot powder or cornstarch
Boil until thick. Remove from heat and cool.

Salad dressing ingredients

1 recipe thick water
½ cup fresh lemon juice*
2 Tbs. extra virgin olive oil (other oils okay)
1 Tbs. liquid glycerin or sweetener of your choice (real maple syrup would be good)
1 Tbs. Balsamic vinegar
½ tsp. onion powder
½ tsp. salt
½ tsp. dried parsley
½ tsp. dehydrated red bell pepper (secret ingredient)
¼ tsp. black pepper

Put all ingredients in blender and blend until emulsified.

* This is pretty tangy. You might want to start with 1/4 cup lemon juice and add more until you have it just right for you.

PS If you want it to have a bit of a bite you could add 1/4 tsp. mustard powder. Hope you like it.
