Huckleberries is a good natural foods market on the south hill.
Mizuna is a good veg friendly restaurant downtown (see below link).

I was there about 3 months ago and read (in Spokane magazine) something about a vegan deli on the northside, but I can't remember the name. The same article mentioned a couple juice places (one was in Brown's Addition) that sounded interesting.
