But to answer your questions...
No, I don't get bored. We eat whole grains and starchy veggies. I use brown rice, whole wheat products, barley, corn, butternut squash, pumpkin. I use seasonings typical of Mexican, Italian, Chinese, Greek, plus the old standbys.
I use beans. Kidney beans and garbanzos are my favorites, but I also use black, pinto, azuki, navy, cannelini, lima....
There's a whole world of veggies out there.
I don't think you need more cookbooks until you get a little more experience with the principles underlying the program. Once you're comfortable adapting recipes you'll be able to use the cookbooks and recipes you already have.
