Hoppin' John




  • 1 c. brown rice
  • 1 onion, chopped
  • 2 celery ribs, thinly sliced
  • 3 garlic cloves, minced
  • 1 t. dried thyme
  • 1 t. fennel seeds
  • 2 t. Cajun seasoning
  • 2 15 oz cans black-eyed peas, rinsed and drained
  • 1 15 oz can chopped tomatoes
  • 1 4 oz can green chiles
  • 1 c. vegetable stock
  • Freshly ground black pepper
  • 8 oz. vegetarian sausage crumbles (optional)


Cook the brown rice and set aside.

In a Dutch oven, sauté the onion and celery in a little water until soft.  Add the garlic, thyme, fennel seeds, and Cajun seasoning and cook for another minute.  Add the black eyed peas, tomatoes, chiles, vegetable stock, and pepper. Cover and simmer for 25 minutes.

Meanwhile, brown the sausage crumbles (if using)  in a large nonstick skillet and set aside.

When vegetable mixture is ready, add cooked rice and browned sausage and mix gently to combine.
