Guest Essay: A Love Letter to Grilled Cheeze Sandwiches
My darling,
When I first noticed you there in sitting there amid the other recipes in Raising Vegetarian Children (and The Ultimate Uncheese Cookbook), I'll admit that I was not impressed. Not offended, certainly, but I skipped right over you, eager to try the others first. How many times did I ignore you, Grilled Cheeze Sandwich, in favor of others with more obvious flair? I do not regret this as they have all been worthy of praise, from the tasty French Bread Pizza to the scrumptious Fruit Butter Bars. Perhaps if I had not first dallied with the others, I would not be able to fully appreciate the wonder of you, Grilled Cheeze Sandwich, in all your piquant glory.
How do I begin to describe your beauty, your simplicity and utter deliciousness? From your vibrant color that rests in that lovely area between orange and yellow to the way the tahini, lemon juice and nutritional yeast blend together in wonderfully cheezy harmony, you are perfection in sandwich form.
I have heard others talk of your many charms, but still, all these years, I resisted. I had grilled cheese sandwiches in my past, but they were rubbery and bland, not worth my time. "How could it be that good?", I scoffed. Well, today as fate would have it, I gazed upon your humble recipe again. I looked away, but my eyes kept returning to you. Soon, it was lunchtime and I could not put it off any longer. I looked through my cabinets and, lo and behold, I had the proper ingredients so as to make you manifest. Ten minutes later, after measuring, whisking, and, finally, grilling, you were before me on the dining room table, like magic.
Grilled Cheeze Sandwich, how could I have lived without you in my life for so long? I positively swooned with my first bite. I could see that my son, his eyes wide, was equally enraptured. Rather than berate myself for not noticing your charms before, I will look forward to the days ahead with you in my life, Grilled Cheeze Sandwich. We will picnic under elm trees, we will walk on the beach together, we will sit together under a starry sky. We will make up for lost time. You are special and perfect and a blessing in every way.
