I love this book!! I have been a vegetarian for 11 years for ethical reasons. An old friend loaned me a copy of your The Uncheese Cookbook. After reading it, I bought my own copy. It is so wonderful knowing that good cheese substitutes exist!! I have officially given up eggs, but cheese was a large part of my vegetarian diet. Thank you for your well-researched book that offers dozens of delicious recipes.

I've wanted to thank you for a couple years now for The Uncheese Cookbook. It is the most tattered and spattered, dog-eared book on my shelf. It has inspired me more than any other recipe book to invent ways to replace dairy in my cooking. A big, big thank you!!!!!

I don't usually write to people just because I like their books, but I'm making an exception in this case because I'm particularly impressed with your recipes. I've had your Uncheese Cookbook for about a year now, and I feel as though I couldn't live without it. I'm vegetarian, not vegan, but within a year have managed to stop eating meat completely, cut back to minuscule amounts of egg, and drastically reduce my cheese intake. Although I still prefer real cheese on a pizza, in most cases I would rather use one of your uncheeses simply because they're more flavorful than the real thing. Since I was so impressed with your Uncheese Cookbook, I just very recently purchased The Nutritional Yeast Cookbook (I think the first book has created an addiction to yeast flakes for me). I made your Roasted Breast of Seitan Turkey last night for dinner, and it was incredible. I've never been a big turkey fan, but I will be making this for dinner often. It was a hit with the whole family.
I usually don't get much more from cookbooks than inspiration. I browse the recipes but take off in my own direction, but that's not the case with yours. I think you're a fabulous cook and that shows in your recipes. You're very much appreciated. Thank you.

"I'm sitting here at my kitchen table enjoying a
piece of Florentine Ricotta Pie and reveling in how
similar it tastes to Greek feta spinach pie. Wow!! I've
never felt so compelled to write to an author and let
them know how much a book has affected my life. The
Uncheese Cookbook has made the transition from "dairy
hell" to "nondairy better health" very manageable and
tasty. What a relief it is to have "cheezy" nondairy
alternatives. I am SO appreciative of your innovative

My husband used to call me the "Dairy Queen" but
now I am the "Tofu Queen!" Our diet has become more
vegan and I feel like I've broken a generational cycle
of eating that has caused health impairments (mine being
dairy allergies that caused migraines). I am considering
starting a family with my husband soon and I'm going
to feel very good about being nondairy right from conception.
I know it will be a challenge since the rest of both
sides of my family are so dairy-oriented. But, having
recipes like yours will indeed be a great asset. Thank
