<p style="font-size: 16px; margin-bottom: 24px; color: #444444; font-family: Georgia, 'Bitstream Charter', serif; text-align: left;">Think of how many people you know over thirty; then multiply that number by 90%. You see, most people in the United States over the age of thirty already have heart disease, although most of them have never experienced the first symptom. And far too often that first symptom is a deadly heart attack.</p>
<p style="font-size: 16px; margin-bottom: 24px; color: #444444; font-family: Georgia, 'Bitstream Charter', serif; text-align: left;">That's what happened to Mike---a good friend of mine in Stonington, CT, a few weeks ago. He was 71, an avid skier, sailor, exercised regularly and was apparently in very good health. While expecting to enjoy many more years of travel, leisure, volunteer work and great times with friends and family---his life was snatched away in an instant.&nbsp;It is the memory of Mike that inspired me to write this post today. Maybe his story will help to save others; he would like that.</p>
<p style="font-size: 16px; margin-bottom: 24px; color: #444444; font-family: Georgia, 'Bitstream Charter', serif; text-align: left;">This photo illustrates the way I will remember my good friend---enjoying time on the water with me and my oldest grandson, Collin. Unfortunately for Mike's grandchildren, they will not be able to sail with their grandfather ever again. Because&nbsp;Mike died of heart disease on April 5, 2013.</p>

I doubt it, although I know that he visited a number of physicians regularly and he may have been taking cholesterol lowering drugs. But no one dies from high cholesterol. (See links below for details). Prior to the presentations, I had been warned by a senior educator and colleague to stay away from delicate topics like animal suffering or the implication that we must never eat meat or dairy. God forbid that we should tell our kids what's really going on behind the scenes.</p>

Of course, I emphasized the potential for disease-reversing, whole foods, plant-based eating to lower our health care costs in the United States---but I also stressed that I wasn't necessarily talking about a vegetarian or vegan way of eating.</p>
<p style="font-size: 16px; margin-bottom: 24px; color: #444444; font-family: Georgia, 'Bitstream Charter', serif;">Rather, I emphasized the maximization of "whole plants" in the diet---as a percent of calories. I told them early in my talk that if they were unsure about the correct answer to a question---that it was probably&nbsp;<em style="border: none; color: inherit;">whole plants.&nbsp;</em></p>
<p style="font-size: 16px; margin-bottom: 24px; color: #444444; font-family: Georgia, 'Bitstream Charter', serif;">The title of my presentation was&nbsp;<em style="border: none; color: inherit;">Food Math 101.&nbsp;</em>The overriding message was that we'd all need to add a lot of whole plants to our daily routine so that the numbers behind what we're eating would enable&nbsp;<em style="border: none; color: inherit;">Mother Earth</em>&nbsp;to sustain our species. Since she has a finite amount of arable land, water and fossil fuel, we must learn to live within those natural and permanent restrictions to our lifestyle. <p style="font-size: 16px; margin-bottom: 24px; color: #444444; font-family: Georgia, 'Bitstream Charter', serif; padding-left: 30px;">"Actually, Jim and anyone else who is curious, the leather goods business is one of the primary reasons that beef and pork prices stay low. More affordable means more accessible to more people and we&rsquo;re all in favor of as many people as possible eschewing meat. Plus, for me anyway, it&rsquo;s hypocritical and expedient to rationalize wearing flesh when I would never eat it." Linda D.</p>

<p style="margin-bottom: 24px;">I've been reading your blog for a long time and my perception is that you're not adverse to learning from your readers. &nbsp;So, I'd like to elaborate a little on my comments about leather.</p>
<p style="margin-bottom: 24px;">First, as I said, the leather industry actually subsidizes the beef industry and, to a lesser degree, the pork industry. &nbsp;Beef prices would be much higher if the hides weren't sold for leather goods. &nbsp;Without the domestic leather business, in fact, beef would be beyond the average person's budget. &nbsp;More expensive beef = less consumption = improvement in our collective health and less environmental damage.</p>
<p style="margin-bottom: 24px;">In addition, the process of tanning hides for leather is very bad for the environment. &nbsp;Not only does it require a lot of energy, it requires the use of dangerous chemicals including formaldehyde, coal-tar derivatives, arsenic, and chromium, which results in particularly hazardous waste.</p>

Dear Linda, You bring up some interesting points in your memo about leather---so interesting that I would like to share my thoughts in this blog.&nbsp;While reading your note, I was thinking about the age old question, "Which came first? The Chicken or the Egg?</p>
<p style="font-size: 16px; margin-bottom: 24px; color: #444444; font-family: Georgia, 'Bitstream Charter', serif;">As for cattle and leather? Which came first? Raising them for their meat or for their hides? As I mentioned in the earlier blog referenced above:</p>

<p style="margin-bottom: 24px;">My work is all about diet, health, and the environment&mdash;I pay no attention to the leather coats, shoes, car seats, etc. I figure that they&rsquo;re by-products of the meat industry and would be outrageously expensive if there were no meat industry. When the meat industry goes away, so will my leather purchases.</p>

I can---and I do. I must confess that there's a lot I don't know about the economics of selling meat without the leather products or selling leather products without using the meat for food. At that moment, he knew that he simply must make things right---no matter what the consequences. And now he has begun the "process" of doing just that.</p>

Probably fifteen or twenty years ago. Does that explain why I had a bout with the swine flu in November of 2009? Since I never went to the doctor, I'm not sure if it was the swine flu, although an RN told me after the fact that my reported symptoms would suggest that it was.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">So why did I get the swine flu in 2009 and would I have gotten it had I taken the flu shot? The answer to both questions is the same: I have no idea. But what I do know is that flu and colds simply haven't been a problem for me since I began strengthening my immune system by eating at the&nbsp;<em style="color: inherit; line-height: 1.5; border: none;">4Leaf</em>&nbsp;level---deriving over 80% of my daily calories from whole, plant-based foods, still in nature's package.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">Before I began eating a near-optimal diet in 2002, I would typically have colds (or flu) about three or four times per year. And, like everyone else, I would get some throat lozenges, a bottle of cold medicine and would sometimes visit a physician to get some kind of medication for the fever.</p>

And, it's usually gone in a few days.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;"><strong style="color: #000000; line-height: 1.5;">My conclusion about flu shots</strong>. For me, it's a case of "if it ain't broke, don't fix it." And what I have doing since 2002 seems to be working fine for me. I also know that all drugs are toxic---containing ingredients that our body does not need. I just learned while researching for this blog that the typical flu shot contains some formaldehyde, mercury and aluminum---all of which my body most certainly does not need.</p>

He totally "gets it" about the health, environmental and sustainability issues. But like all other journalists, he doesn't take a stand; he provides no leadership, he is not a role model himself and he is inconsistent.</p>

Here's what he had to say about the problem:</p>

Now, he was being told that his $1,000 out-of-pocket deal had been eliminated.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">Ultimately, after all those phone calls and endless stress, he ended up with an even sweeter deal than he had before---he would now be paying just $60/month for his cancer drug---Leaving $131,280 to be paid by the rest of the system.</p>

While he occasionally presents some very helpful information (See my "home run" blog below), his typical audience has no idea what to believe. That's because the information presented on Tuesday is likely to be contradicted a few days later.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">But let's not blame Dr. Oz. We must understand that he is in the entertainment business---not the health-promotion business. If he just talked about healthy stuff, his show would be cancelled in less than a month.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">But the sad part of this story is that millions of Americans take everything they hear on his show as fact---and that could sometimes be hazardous to their health.&nbsp;<em style="color: inherit; line-height: 1.5; border: none;">Confusion over clarity</em>&nbsp;is not good for promoting health. But it is good for making money.</p>

<p style="line-height: 1.5; margin-bottom: 24px; text-align: left;">Mr. Hicks, I read your article about this and concur with the subject of your article. &nbsp;I just finished radiation treatment for prostate and hate/regret it also.&nbsp;We don't get enough guidance from doctors and basically they just sell whatever they do. &nbsp;I was able to step around all the various land mines until one got me after the rosy sales pitch and fear mongering.</p>
<p style="line-height: 1.5; margin-bottom: 24px;">There are so many of us suffering quality of life issues following the barbaric methods of treating this cancer...The best hope we are given is the band aid approach and often times the band aid doesn't work.&nbsp;We should be given choices and we should be allowed to determine if we are willing to accept any risk.</p>

He's back on the cover of TIME with a story that's guaranteed to keep the consumers confused about food. But then, that's exactly what makes food producers happy. From the looks of the cover, it looks like Dr. Oz is going to write about a truly health promoting diet---like the ones that Esselstyn, Ornish, McDougall, Fuhrman, and Barnard all use to reverse chronic diseases in their patients. But he doesn't.</p>

It's because there is simply too much money and special interests riding on maintaining the status quo. Not only can we save $2 trillion on heath care, but we can show the world how to curb global warming, end world hunger, reduce our carbon footprint and end the needless suffering of billions of food animals per week.</p>

But lately, I have been writing mainly about sustainability issues and the need for corporate CEOs to take the lead when it comes to leading America away from our unhealthy, wasteful, harmful and barbaric western diet-style.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">The primary motivation for those corporate CEOs will be to save money on healthcare; thereby improving the profitability of their enterprises.</p>

<p style="line-height: 1.5; margin-bottom: 24px; text-align: left;">But with every one of their employees that adopts a health-promoting plant-based diet, the lives of thirty farm animals will be saved. Thirty animals that will not have to live their entire lives in agony---only to face a brutal death at the end.</p>

<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">And, don't kid yourself, we're not just talking about the "meat" animals like pigs and cows. We're also talking about the egg and milk producers---the ones that many vegetarians don't think have to suffer. For that reason, we hear news every day about the continuous search for high-tech drugs that will enable us to protect ourselves from our bad habits or cure us once we have been stricken by disease. Recently (10-11-12) we heard the following news about the Nobel Prize:</p>

<p style="line-height: 1.5; margin-bottom: 24px;"><span style="font-size: small;">Two American researchers won the Nobel Prize in chemistry Wednesday for studies of protein receptors that let body cells sense and respond to outside signals like danger or the flavour of food.&nbsp;<span style="color: #ff6600; line-height: 1.5;">Such studies are key for developing better drugs.</span></span></p>
<p style="line-height: 1.5; margin-bottom: 24px;"><span style="font-size: small;">The Royal Swedish Academy of Sciences said Robert Lefkow-itz and Brian Kobilka had made groundbreaking discoveries, mainly in the 1980s, on an important family of receptors, known as G-protein-coupled receptors.</span></p>
<p style="line-height: 1.5; margin-bottom: 24px;"><span style="font-size: small;">About half of all medications act on these receptors, including beta blockers and antihistamines, so learning about them will&nbsp;<span style="color: #ff6600; line-height: 1.5;">help scientists to come up with better drugs.</span></span></p>

<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">With the election only a few weeks away, I thought it was time to share a few of my favorite&nbsp;<em style="color: inherit; line-height: 1.5; border: none;">zingers</em>&nbsp;that I use in explaining the maddening absurdity and unsustainability of our typical western diet.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">And while there are references or footnotes for all of my&nbsp;<em style="color: inherit; line-height: 1.5; border: none;">zingers</em>&nbsp;somewhere in our book or on this blog, I choose today to invoke "debate season privilege" and just say whatever I please. (See "Fact Check" note at end)</p>
<p style="text-align: center;"><span style="font-size: medium;">My Top Ten Zingers --- for promoting health, hope &amp; harmony</span></p>
<ol style="color: #444444; line-height: 1.5; font-size: 16px; margin: 0px 0px 24px 1.5em; padding: 0px; list-style-position: initial; list-style-image: initial;">
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Harmony.</strong>&nbsp;In the past fifty years (a mere blink in the eye of history) we humans have inflicted more damage on the harmony of nature than all previous generations of humans combined for the past 200,000 years.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Water.</strong>&nbsp;To produce one kilo of potatoes requires&nbsp;100 liters of water; whereas to produce one kilo of beef requires 13,000 liters of water.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Earthlings.</strong>&nbsp;Only 100 billion people have ever lived. 7 billion are alive today. And we torture and kill 2 billion animals every week for our dinner tables.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">World Hunger</strong>.&nbsp;For every meat-eater who goes vegan, he/she will free up enough land to feed 3 or 4 families of 4 people each.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Waste.</strong>&nbsp;By cycling our grain through animals to produce meat, we waste&nbsp;90% of the protein,&nbsp;96% of the calories,&nbsp;100% of the fiber and&nbsp;100% of the carbs.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Axis of Evil</strong>.&nbsp;George Bush was wrong. The Axis of Evil doesn&rsquo;t run through Iraq, or Iran or North Korea. It runs through our dining tables.&nbsp;<em style="color: inherit; line-height: 1.5; border: none;">Weapons of Mass Destruction</em>&nbsp;are our knives and forks.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Starving people</strong>.&nbsp;1 billion people today are hungry. 20 million people will die from malnutrition. Cutting meat by only 10% will feed 100 million people. Eliminating meat will end starvation forever.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Needless disease</strong>.&nbsp;Meat causes a wide range of cancers, diabetes and heart disease. Can anyone name just one disease caused by a plant-based diet?</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Disappearing resources.</strong>&nbsp;We humans are squandering our natural resources by over-cutting, over-grazing, over-pumping, over-plowing and over-fishing; a&nbsp;startling 80 percent of oceanic fisheries are being fished at or beyond their sustainable yield.</span></li>
<li style="line-height: 1.5;"><span style="font-size: small;"><strong style="color: #000000; line-height: 1.5;">Intelligent species?</strong>&nbsp;There are over 50,000 vertebrate species (5500 of which are mammals) and well over one million species of insects. ALL of them are living in harmony with nature---with one exception. Human beings.</span></li>
</ol>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">Long after our book came out in October of 2011, I heard an environmentalist make a statement that caught my attention:</p>

We are now using ALL of this planet as if there were no other creatures sharing it with us. Although our species has existed for only 5/1000th of one percent of the 4 billion years that there has been life on Earth, we have done some serious multiplying in the past few hundred years.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">It took us about 200,000 years to reach the one billion mark in 1804. Since then, in just over 200 years (a mini-blink in the eye of history) we've added another six billion people.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">Now, all seven billion of us are still multiplying and destroying our natural resources at a mind-boggling rate. When will the madness end? Will we have to wait for Mother Nature to have her revenge? Or can we come together and take action now?</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;"><strong style="color: #000000; line-height: 1.5;">That action should include two big steps</strong>. Stabilize global population and begin an aggressive return to the natural diet for our species---a whole foods, plant-based diet. The latter step will give us the time needed to get a handle on the former. Who is going to lead this transformation? I have concluded that it has to be the large, profit-motivated corporations of the world.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">That's because they're the only ones with a financial incentive to reduce the out-of-control cost of healthcare. In the largest of companies, just a handful of CEOs can affect millions of people. And the resulting PR success stories will be heard and copied by hundreds of millions more.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px;">Now, here's the best part. By taking that step, those big corporations will be providing an integrated environmental blueprint for the rest of the world to follow. Be eating the food that is best for our health, we simultaneously do some wonderful things for the planet---and her ability to provide for the longterm sustainability of the human race.</p>
