As soon as your kids are old enough, have them take either the Stanford or Iowa Achievement standardized tests. I did that last year with my 2nd and 4th graders and it was a tremendously relief to get the results. I'm in a homeschool-friendly state and don't have to get these tests, but I am choosing to make this an annual thing because it was such great proof that my unschooled kids are learning lots! How can a school official argue with Stanford standardized test scores?!

Another thing I would advise is to journal daily about what what you noticed they learned. For instance, my 3rd grader and I had to do a lot of baking the other day, so I folded in experience with fractions and it became a way to notice her life application math skills. Journal this way and you will soon have an impressive list. AS I journaled, I found I trained myself to find learning where I previously had not thought to look.
