Kristin,
I do hope someone else has respoonded to you before me. Anyway, I don't know alot but do feel your desire and the urgency to help your friend. There are many curriculums out there that provide almost all subject matter around books that are read. I'm hoping that your friend has some sound reading skills and if that is the case go to Sonlight curriculum and copy off their list of books designed for history. If you focus on the biographies or fiction your friend by reading these books and doing a timeline will get an awesome sense of history. Additionally, wiith the timeline you can then plug in political, scientific, social, and other pertinent dates in history giving a pretty comprehesive picture of the different times in history and the nuances of the cultures of those times.
Math is..well... math. There is no way around it. There are lots of sights onliine to go to to get a baseliine of her abilities in this area and then to proceed from there.
Also if there is a local homeschooling group near you, you should join with her if you can. Our local group does plays and other presentational and drama events including music which would allow her to continue to foster the skills that her parents want and also be a way to advocate for her by optimizing these things.
I am not a teacher but I was a homeschooling mom and now I am working on my masters degree in social work.
