There are lots of projects for both city and farm kids, with or without animals. Many of these projects involve science. Just as an example, my kids have done Foods (experiments with bone calcification, yeast, mold, etc), Geology, Electricity, Rabbits (covered animal nutrition, health, genetics) as well as various craft projects that incorporate art into our schooling.

There are LOTS of other projects involving such varied things as public speaking, creative writing, geneology, etc. I know this is getting a bit off topic of your original question but just wanted to point out that 4-H can be a wonderful resource for homeschool kids.
