cored and peeled the apples, cooked them down, mashed them, and added cinnamon, put in jars, then the water-bath canner. I used a variety of apples, like Rome and Spy, Empire and Fuji. But I have a friend who freezes her applesauce in quart-size freezer bags lying flat in the freezer and they stack quite neatly and each bag is just the right amount for her family. We have some very good orchards around here for peaches and apples, and if you go at just the right time, you can get "drops" very cheaply.
