Most states have a state homeschooling organization (preferably a Christian one). They should be able to tell you what the requirements are. I've homeschooled in two different states (VA & now MN), and the requirements are pretty basic until you hit high school. Even there, you have some flexibility...for example, many states now consider Algebra 1 an 8th grade class. If I have an 8th grader who is weak in math, I'm not going to do either of us any favors by forcing them to struggle through it before they're ready. I'll do an extra year of general math skills, and if they're still not ready in 9th, we'll do a solid pre-Algebra, starting Algebra 1 in 10th. Unless you're going for the academic scholarships at the top-ranked universities, most community colleges are welcoming homeschoolers. If they're solidly grounded in their basic math and algebra by the time they graduate high school, they won't need remediation at the college level (which a lot of kids do end up needing, even if they took pre-calc in high school).

One thing most states do look for in the middle school years is state history. Again, I don't know the requirements for FL. You could look at the HSLDA website. I think they will list "general" homeschool laws for each state on the public access portions of their site.
