I would recommend reading "Recovering the Lost Tools of
Learning" written by Douglas Wilson. I think the most important
thing to keep in mind when classically homeschooling is that you
need to take things slow. Yes, eventually kids will get to the point
where they are reading and doing the things that you talked about
in your question but you need to start slow and provide them with
a firm foundation on which to build. Have you read any info on the
trivium? That would be a good place to start. By reading about the
trivium you get a great idea of how your childs education
progresses over time.
As far as teaching Latin, I know a lot of people who start in second
grade providing that your child has a firm foundation in the
"grammar" of grammar.
I use a lot of Veritas Press materials and really love them. When
you have a child at the age of eight, they are in the grammar stage
of learning. They need to learn their grammar of math (facts),
history and bible (dates and events), Literature (vocab, along with
great stories that they can experience on their grade level)
Latin(vocab, chants,..)
It is important to remember that classical education works in a
cycle. Children learn the info during the grammar stage, are reintroduced to it and interact with it at a grater level during the logic stage and take it to an even higher level of understanding during the rhetoric stage. In which they process the info and apply it to a wide variety of situations and subject matter.
