Regarding excess gas from legumes:
#1 - the kind of fiber in legumes promotes "friendly bacteria" in the gut.
#2 - it takes a certain amount of time (varies from person to person) for the intestinal flora to adjust to the friendly bacteria.
#3 - if you continue to eat simple sugars (e.g. white/brown sugar, white flour, white rice, etc. - i.e. anything that the "unfriendly bacteria" feed on, you may have more difficulty adjusting to this increase in fiber.
