Subject:         Better Onion Rings & Egg Replacer

If you've tried the backed onion ring recipe here, you know its pretty good. All the flavor and none of the grease, which is what I never did like about deep fried onion rings.

I just tried my first batch with egg replacer last night. I'd been using egg whites until I realized my error. Then I ordered egg replacer and put a moratorium on onion rings till I got it. I got my delivery last night, and the egg replacer worked great. I couldn't tell the difference.

One thing I recommend: Try taking the corn flakes and blending them into a fine powder. They adhere to the onion better that way. Also, if you take an empty shaker (with decent size holes) and put the crumb mixture in that, then its just that much easier to coat them than using just a dish to bread them.

Finally, I substituted garlic powder for garlic salt, and only used substitute salt AFTER they came out of the oven to reduce sodium. They were excellent, and my Wife, who is NOT vegan gobbled up a bunch of them.
