Just in time for all the lovely leprechauns that are sure to emerge tomorrow... I love St. Patrick's day! I love this stew almost as much. It is ridiculously delicious, deceivingly simple and a must for St. Paddy's day; or any day for that matter.
Note: it was brought to my attention that Guinness isn't vegan due to the process they use in making it. If you like, switch the Guinness up for another dark beer.
