I rarely talk about raising livestock & its effect on the environment because whenever I do, people refuse to believe me, even when I back it up with a dozen sources. No matter who I talk to, whenever you say the word "vegetarian" they have images of militant PETA activists (I'm not knocking PETA, I love them). And although I'm a supporter of animal rights, my primary reason for being a vegetarian is it's effect on the environment.

My question is, how do you explain to someone how horrible it is for the environment without overwhelming them with the statistics?

It seems like a Catch 22... you need to back your statements up with facts but the facts are so extreme that people refuse to believe them.
