Loved the recipe... It looks yummy... Unfortunately, it seems rather high in fat due to the 2 cups of walnuts... I plugged the nutritional information into my recipe builder and calculated that the calories from fat are 43%... I'm trying to maintain a vegan diet in the 10% range... I'm confused as to how this can be a healthy recipe with such high fat content... Dr. Lederman - Please help!!!

Can you believe that this comment was just delivered to my inbox TODAY? 2 cups of walnuts in 8 ounces. We served this at Thanksgiving last night and got 16 slices out of it so there was 1/2 an ounce of walnuts in each slice which I believe is acceptable to even Jeff Novick. If you only got 12 slices out of it there would be 3/4 of an ounce per slice and if you took a huge slice, 1/8, that would be an ounce which in his recent lecture he said was acceptable. You can leave the nuts out entirely if you like and substitute raw mushrooms.

I would use raw finely chopped mushrooms, uncooked.
