Try using a crock pot (slow cooker). I work all day and the crock pot is a great option. Add whatever beans and vegetables you like, along with veggie broth or water and some spices and let it cook all day while you're gone. When you get home you've got a hot meal waiting that is healthy and filling, and there are endless combinations you can make with a crock pot. :)

I hope he stays on his journey to health.
I always find it amazing that people complain about not having time to cook, but they always have time to watch TV, sit on the computer and do a lot of other, less important things.
