Wow, this is a great dish! I'm just trying some vegan dishes, and this one is SO flavorful. Thanks for sharing and making this transition from meat-eater to plant-eater a little easier.

You might want to use tomatoes sold in glass containers or tetra pak (or cut up your own). The acid in tomatoes cause the resin lining of tin cans to leach BPA according to an article in a Yahoo health magazine:
