the articles mentions roasted vegetables, but doesn't have a recipe. But here are some instructions on how to roast vegetables:

Preheat oven to 450 degrees.

Cut all vegetables into bite size pieces and place in roasting pan.

Toss with 1 tablespoon olive oil, salt, and pepper to mix and coat. Roast for 30 minutes, stirring occassionally until vegetables are tender and lightly browned.
