I have been a chef for over 25 years after graduating from the culinary institute of america in new your and trained in france I mover to the new orleans la area about 22 years ago. I now teach culinary arts at a local high school. I attended the CHIP program in rockford ill and teach a class in diet intervention in the area. I also have my own catering business that just started up were I covert famous new orleans recipes to vegan.

chef AJ, I would love to do what you do. If you read my profile you can see that I'am a chef. I would like to do some of the things you are doing here in New Orleans but trying to get started in this city is very hard with all the tradition and foods here.
