Vegan "Special K" Roast

My youngest son is vegetarian and loves nothing more than a delicious roast. While home for Christmas break he asked me to make him a Special K Loaf. I tried a new recipe I found on the Internet which contained eggs and cheese, but in retrospect we all liked our tried and true vegan recipe better. So here is the tried-and-true "Vegan Special K Roast" recipe--the one I should have made and will soon make again!

 

 

Ingredients for Vegan "Special K" Roast:

2 pounds tofu

6 packs George Washington broth

1 stick melted margarine

1 cup chopped walnuts

1 large chopped onion

1 12-ounce box Special K cereal

 

Directions:

Mix well and bake at 350 degrees  for 45-60 minutes.

Ingredients
RICE, WHEAT GLUTEN, SUGAR, DEFATTED WHEAT GERM, SALT, HIGH FRUCTOSE CORN SYRUP, DRIED WHEY, MALT FLAVORING, CALCIUM CASEINATE, ASCORBIC ACID (VITAMIN C), ALPHA TOCOPHEROL ACETATE (VITAMIN E), REDUCED IRON, NIACINAMIDE, PYRIDOXINE HYDROCHLORIDE (VITAMIN B6), RIBOFLAVIN (VITAMIN B2), THIAMIN HYDROCHLORIDE (VITAMIN B1), VITAMIN A PALMITATE, FOLIC ACID AND VITAMIN B12.

Not vegan.

I substituted the margarine for a bit of olive oil and it turned out great!
