You won't want to tame the field mouse, you'll want to be able to release it, they really won't ever become as tame as pet mice. A refuge or a rescue would give him Critical Care usually, which is sort of like crushed up guinea pig pellets with extra nutrients, you mix it with water, and feed it through a dropper or syringe (not jamming down the throat, but they just lick it up). I don't recommend feeding cheese, it's not really good for them (that's another one of those myths, like the one about rabbits needing carrots... not sure where it came from, but mice really don't need cheese). KMR should help, as well as some crushed pellets (give mice or hamster feed later on, but for now it won't be able to eat that yet). In less than 2 weeks it should be eating fine on it's own and probably you will want to release when it has a full fur coat, and release preferably in the same spot it was found. Hope that helps!
