I feed over a hundred mallards every day in my back yard. My joy is seeing the new babies that show up through out the summer. Anyway, for the most part all the ducks love the sunflower seeds that you find in the wild bird feed.(they are black and oily) I now buy that type of sunflower seed at my local Home Depot or Lowes in ten pound bags. For the little ones, I feed them and their mothers the wild bird seed and mom makes sure they get the insects etc... that they need. As far as telling what sex they are you will have to wait until they get to the juvenial stage... at least I do, because all of my mallards are wild.
