It IS a process -- and often it takes 6 months to a year to really UNDERSTAND this new dog ... because particularly with a dog with an unknown background, it takes a good long while to really ferret out behaviors.
Depending on what your home situation is (and remember, I'm in another hot climate -- altho where you are hot and 'dry' my climate is hot and STEAMY which is also incredibly debilitating) -- you can do a lot of exercise right inside. Even a raw bone frozen and then let them work hard on it, or put that bone thru the dishwasher and then stuff it with pureed veg and freeze it -- get them really interested in working on something like that can help. Also just plain tossing a couple of toys the full length of a house can wear them out.
I know one of Daryl's favorite games with her jack russell is to take an EMPTY Kong out in the back yard and just throw it -- because the Kong is a weird shape it doesn't bounce NORMALLY. It doesn't go in a straight path so there's a lot of zigging and zagging to it.
