Forget about the cost. If one of your cats chews through a live
wire, they can and will fry to death in a very horrible fashion. I had
this happen to a roommate's dog (not my dog, not my room).
Given that your cats have already shown a tendency to chew
through live wires, their lives are in imminent danger.
You must IMMEDIATELY start unplugging all wires when you are in
the room, or keep the cats away from them. This is a temporary
fix. Go to a hardware store and find some kind of tubing to cover
your wires. Plastic or PVC, whatever works for your installation that
cats can't chew through.
There is no spray which is 100% reliable. And none last forever. Do
not rely on sprays.
It might also be helpful to identify the culprit, many kittens chew
and outgrow the habit. But again especially with so many cats it is
better to be safe than sorry.
It's not the cats faults that they are chewing, it's their nature. You
need to be creative, ask some professionals at the hardware store,
spend a few bucks and solve this problem.
