Amazing as it might seem, it could be the type of fat, or the fact that you are on a low fat diet. I've found the most amazing books, cheif among them, "Eat fat, Lose fat" by Mary Enig and another woman whom I've forgotten. If you can't get the book, it outlines the benefits of coconut oil and other healthy fats, but I think coconut might be the only one that will work for a vegan diet. Another book is "Heart Disease, it's NOT what you think" by Dr. Stephen Byrnes. Best wishes, I hope you find a good solution.
