Subject:         Most basic "from-scratch" recipes sought

Hi!! I live in Nigeria, where there is no tofu (even if I could get my husband to eat it). Cheese is unbelievably expensive and cheese substitutes non-existent.

However, fresh vegetables, spices, grains and beans are in abundance (but definitely want a good washing and pick-through).

My kids, who are teens raised mostly in America till two years ago, get tired of African recipes (although they rock!). They willingly eat plenty of veggies as long as they are flavorful and not too strange-looking (even though they willingly tried chinge, which is basically deep-fried termites!).

So pleeeease, post your favorite dinner using the most basic, fresh non-processed ingredients!!

(I can get soy sauce, tahini, eggs, a few luxuries like that.)
