Some ideas:

Baked stuffed potatoes
Cole slaw
Baked beans
Fruit Salad
American Pizza (just skip the cheese and top with plenty of garlic and veggies)
rice pudding (use alternative milk, of course)
"Indian Pudding" (like rice pudding but made with maize meal)
Peanut butter and jelly sandwiches
