Subject:         banana bisquies

Can ground coconut flakes be substituted for the coconut oil in your recipe below? Thanks!

Banana Bisquits

1/4 cup date sugar (or other dry sweetener)
1/2 cup coconut oil
2 egg substitutes (or 2 eggs)
1 cup mashed banana
1 cup oat flour (oat flakes ground to flour)
3/4 cup finely-ground sunflower seeds
2 tsps baking powder
1/4 tsp baking soda

In a large bowl, mix ingredients by hand.
Form into bisquit shapes.
Put on greased baking sheet.
Bake at 350 F until not quite desired degree
of doneness. (They will get crispier
as they cool, so don't overbake them.)
Let cool completely.
Store in fridge.
