You might post this over on New Veggies, Bryanna has lots of resources that can help you. Basically it takes a change of mindset. It's probably going to be difficult, if not impossible, for the older kids, because tastes are set early in life and unless there is a personal motivation (compassion for animals is the strongest, or health issues) people don't see why they should stop eating meat.

You can only make decisions, really, for yourself, and set an example, making delicious food so your kids can see that there is life beyond animal products. I would suggest your doing lots of reading about the health benefits of a plant-based diet, as well as the ethics issue and environmental issues surrounding animal agriculture. Read John Robbins, John McDougall, Esselstyn. And for me, a great library of vegan cookbooks is indispensable.

Vegan eating can be an amazing experience, but it takes time to turn the boat around in a new direction. Time to get used to new products, to explore the vast array of plant products available, you will find, as many of us have, that vegan eating is by far more interesting and varied than we ever thought it could be.

Bryanna has excellent recipes and is a good resource, I have all her cookbooks, I also have probably 50 or so other books and spend quite a bit of time poring over them deciding what to make. The variety is endless and the food can be really delicious.
